This is best done when plums are in season as they are cheaper then. It makes a fab present especially when combined with nice homemade or bought breads and cheeses in those SOS style hampers.
To make it you will need:
½ tsb olive oil
¼ cup white vinegar I used spiced as you don’t need to add spices and it’s cheaper
¼ cup Demerara sugar
To cook the chutney:
Cut the plums in half and remove the stones then roughly chop them.
Add chopped shallots, olive oil and sauté until softened, add the plums vinegar, water and sugar and stir continuously until the sugar has dissolved.
Microwave a couple warm jam jars to sterilise them then when the chutney is soft and slightly thick spoon whilst warm into the warm jar seal the jar and leave to cool before labelling.
